Food For Free! How To Make Nettle Soup
Making nettle soup couldn't be easier. As the weather warms, the young, tender shoots begin to grow. You can pick them regularly and save money.

Take heart and leave a small area in the corner of your vegetable patch for this native 'weed', in doing so it will reward you back with its many useful delights. Full of iron and rich in vitamin C, it makes a tonic for anyone who needs a natural pick me up. Here is a simple nettle soup recipe that all the family will love:
You will only need:
1 large bowl of young fresh nettle tops
1 litre / 2 pints of organic soya milk
1 vegetable stock cube
1 onion
1 litre / 2 pints water
Salt and pepper
Method:
Soften the nettle tops by placing them in the boiling water and simmer gently (this removes the sting too!). Add the finely chopped onion, soya milk and stock cube to the water. Heat slowly adding salt and pepper to taste and then just use a blender.
